Slow Cooked Suya Gold Lamb Shanks with Mashed Potato
Lamb shanks (1 per person)
Suya Gold - ORIGINAL SPICE RUB or FIRE SPICE RUB (IF YOU LIKE IT HOT!)
Onion finely chopped
Carrot finely chopped
Garlic 3 cloves
Oregano
Chicken stock
Tomato puree
Red wine
Olive oil
Salt
Best cooked in a cast iron casserole dish.
Heat olive oil in the cast iron dish, brown each shank and remove , add the salt, onion, garlic and carrot until soft , add the red wine, oregano, Suya Gold (30-40 grams) chicken stock and tomato puree , just enough liquid to cover the shanks.
Cook at 150 degrees c for 5-6 hours , removal the lid for the last hour if you prefer thicker sauce.
For mash
1 large potato per person
Cream
Salt
Butter
Boil potatoes untill very soft
Use a food mixer with a paddle attachment , add potato, cream, slat and butter and mix on high just for ling enough to incorporate all the ingredients.
